I love the richness that the raw cacao brings to the whole recipe.

Below you will notice, you can choose between pecans or walnuts. The walnuts bring an earthy texture and taste to the mix…while, the pecans make it a bit more sweet tasting.

Gluten Free Raw Cacao Coconut & Apricot Granola

  • 1 cup gluten free oats
  • 1/2 walnuts (halves or pieces)
  • 1/2 roasted unsalted cashews
  • 1/3 cup raisins
  • 1/3 silvered raw almonds
  • 1/3 cup unsweetened coconut flakes
  • 2 tablespoons chia seeds
  • 2 tablespoons ground chia seeds
  • 1 tablespoon raw cacao powder
  • 3 tablespoons brown rice syrup
  • 1/2 teaspoon coarse salt
  • 1 tablespoon honey
  • 1/3 cup apricots, roughly chopped

Method:

  1. Preheat oven to 400 degrees. Place a silpat mat or parchment paper on a baking pan.
  2. In a large mixing bowl. Add all ingredients to the bowl – except the honey and apricots. Using a rubber spatula, mix everything together. Make sure it is all evenly coated.
  3. Pour mixture onto the baking sheet. Level/spread out as much as possible.
  4. Place in oven for 8 minutes. Remove and mix/turn over the granola with a spatula. Lower the oven temperature to 350 degrees. Place granola back into the oven for 4 minutes.
  5. Remove and mix/turn over the granola with a spatula. Add back into the oven for another 4 minutes. Remove from oven. Pour the honey and apricots on top and let cool.

*I like how toasty this granola is. If you don’t, only baking for the first 8 minutes, and let cool.
